Uncle Andy… Where do I even begin? Andy is Lou’s brother, and I am forever grateful to him for fixing me up with his sister 27 years ago. I moved to Belzoni, MS in 1993 and didn’t know a single soul. At this time, Andy was single as well and was one of the very first friends I made. Today, Andy lives right up the street from us so he’s at almost every Friday Night Porch Party. Andy is a good cook, but he likes the fancy stuff, especially sweets. Those are his specialty. He’s been preparing this cranberry salsa for years as Christmas gifts to friends and family. He prefers it served with tortilla chips, the blue kind if you can find them. I served it atop a block of cream cheese last Friday, and it was a hit.
Uncle Andy's Cranberry Salsa
Ingredients:
1 12-ounce bag fresh cranberries
1 bundle fresh cilantro, chopped
1 package green onions, chopped
1 jalapeno pepper, chopped (leave a few seeds if you want some extra heat)
Juice of 2 limes
3/4 cup brown sugar
Pinch of salt
Directions:
Combine all ingredients in your food processor and chop to a medium consistency. Refrigerate until use.
