In the mid-nineties, the Jackson Junior League published a new cookbook called Come on In. Most Mississippi homes purchased the new book. This recipe was included under the name Monterey Jack Salsa. My children rightfully call it Ugly Dip. My version is similar, but with a few changes. I think it will be a nice addition to your Friday Night Porch Party.
Ugly Dip
Ingredients:
1 small can of chopped green chilies
1 small can of chopped black olives
6 green onions, chopped
2 cups Monterey Jack cheese, shredded
8 ounces chopped pimentos
1 bundle cilantro, chopped
¼ cup chopped banana peppers
¼ cup banana pepper juice from the jar
1 tablespoon minced garlic
1 16-ounce bottle Olive Garden Signature Salad dressing
Salt and pepper to taste
Directions:
Combine all ingredients in a bowl and refrigerate until ready to serve. I serve this with multi-grain Scoops. Lou prefers it with Frito Scoops.
