Sausage Orzo Soup
Ingredients:
I pound ground sausage, coarsely scrambled and drained
2 tablespoons olive oil
1 red onion, diced
4 stalks celery, diced
1 cup baby carrots, diced
6 cloves fresh garlic, coarsely chopped
8 cups chicken broth
2 15-ounce cans diced tomatoes
1 tablespoon dry Italian seasoning
1 tablespoon oregano
1 cup Orzo pasta
Salt and pepper
Directions:
In your Dutch oven, sauté the onions, celery, carrots, and garlic in the olive oil about 10 minutes. Add all remaining Ingredients except the orzo and the sausage. Bring to a simmer for about 15 minutes. Check for salt and pepper. Add In the Orzo and sausage and simmer until the pasta Is done and the vegetables are tender, about 20 more minutes.
