Panko Crusted Onion Rings
Ingredients:
2 large, sweet onions, sliced into rings about 1/2 Inch thick
2 cups of flour seasoned with a little Toney's Cajun seasoning, salt, and pepper
5 eggs, beaten
2 cups Panko breadcrumbs
Oil for frying
Directions:
To your frying pan add enough oil so It's about 1/2 Inch deep. Heat oil to a little more than medium. You will need three separate bowls to batter the onion rings. The first for the seasoned flour. The second for the eggs and the third for the breadcrumbs. Batter each onion ring in this order: flour, eggs, four, eggs, breadcrumbs. Each ring should be battered in the flour and eggs twice before going to the breadcrumbs. Place on a platter until time to fry. Fry the rings about 3 minutes before flipping. Both sides should be nice and brown. Removed to a paper lined patter to drain. I like to serve mine with comeback sauce. (I tried this recipe in the air fryer hoping It would work. It didn’t for me. It just wasn’t the same.)
