As you can see by the website, I don’t cook many sweets. With age, I’ve lost my sweet tooth. However, my children and my friends have not. For most Friday Night Porch Parties, someone usually offers to bring a sweet. I ran across this recipe a while ago and decided to try them this past Friday. Anne Scott said this is now her new favorite cookie. I like it, too.
Oatmeal Butterscotch Cookies
Ingredients:
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 sticks butter, softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs, beaten
1 teaspoon vanilla extract
3 cups quick oats
11-ounce package butterscotch chips
Directions:
Preheat oven to 375 degrees. In a mixing bowl, combine the flour, baking soda, cinnamon and salt. Set aside. In a large mixing bowl, cream the butter, sugar and brown sugar. Add the eggs and vanilla mixing well. Gradually add the flour mixture to sugar mixture beating until smooth. Fold in the oatmeal and the butterscotch chips. Drop the cookie dough by the tablespoon on the baking sheet. Back 8-10 minutes until golden brown.
