I met my buddy, Henry, in 2011 when he and his family moved into the neighborhood. We quickly learned we had quite a bit in common. First, he is in the insurance business like me. Second, he grew up with Cameron. Lastly, Henry loves to cook, so we talk about food all of the time. Because of these common threads, we hit it off instantly. On a recent visit to his Mama’s house, he found his grandmother’s old recipe for her homemade mayonnaise. Henry’s grandmother, Mrs. Hamill, married a Methodist preacher when she was very young. That right there tells you she could cook! Most Baptists, especially the older generation, can most definitely cook.
I tried Mrs. Hamill’s homemade mayonnaise and loved it! I had been searching for a good mayonnaise recipe, and this one is perfect for Mary and Erna’s Louisiana Potato Salad.
Mrs. Hamill's Homemade Mayonnaise
Ingredients:
1 egg, room temperature
1 teaspoon yellow mustard
Juice of 1/2 a lemon
1 teaspoon white vinegar
1 teaspoon salt
Dash of black pepper
2 cups vegetable oil
Directions:
Add all Ingredients except the oil to your food processor and mix. While mixing, slowly add the vegetable oil to the food processor. Continue mixing until it's the desired consistency. I store mine in a mason jar in the refrigerator.
