Mrs. Betsy's Egg Custard Pie. Mrs. Betsy was my friend Cameron's Mother. I met Cameron in 1988 at Ole Miss and we've been friends ever since. Mrs. Betsy was as good as they come and loved by everyone that knew her. If I remember, I make Cameron his mom's pie every year for his birthday. He's a pretty special guy. This recipe is a keeper.
Mrs. Betsy's Egg Custard Pie
Ingredients:
1 deep dish pie crust
3/4 cup sugar
1/2 teaspoon salt
1 tablespoon flour
1/2 stick of butter, softened
4 eggs
1 1/4 cups milk
2 tablespoons vanilla
Directions:
Heat oven to 350 degrees. Using a fork, prick holes all over the pie crust and bake about 3 minutes. Remove from oven and set aside. Whisk together the sugar, salt and flour. Mix In the softened butter before adding the eggs one at a time. Lastly, add in the milk and vanilla. Transfer the mixture to the pie crust. I always place my pie on a cookie sheet to make the transferring into the over easier. Bake the pie until the center Is set and no longer giggling, about 40 minutes. Remove from oven and cool before serving.
