Lou met Ginger, aka Miss Holaday, back in 2006 when she returned to teaching. They have been across the hall from each other on the kindergarten hall of Madison Station Elementary ever since. Ginger is pretty famous around our county as the longest tenured kindergarten teacher at Madison Station. She is also a lover of good food just like us. Ginger and her many cousins have an ever-growing family cookbook, and they share new recipes often to add to the book. Ginger shared this new find last week that I tried at Friday Night Porch Party. It was a hit! Add it to the menu soon.
Miss Holaday's Greek Salsa
Ingredients:
8 ounces feta cheese, crumbled
1 large ripe tomato, chopped
1 cucumber, peeled and chopped
1/2 cup Kalamata olives, chopped
1/4 cup parsley, chopped
3 green onions, chopped
2 teaspoons minced garlic
1/2 cup olive oil
1 1/2 teaspoons dill weed
1 1/2 teaspoons oregano
Juice of 1/2 lemon
Salt and Pepper to taste
Directions:
Combine all ingredients and chill several hours before serving. I served with some home baked Pita Chips.
