I’m sure you’ve heard of the southern chain food restaurant called Chicken Salad Chick. Many refer to me as Mr. Chicken Salad. I’m kidding, but my family really should call me that. I love chicken salad in all sizes, shapes, and forms. Lou loves a caper, so I recently came up with this little recipe just for her. There’s something special about the flavor combination of lemons, capers and dill, and this recipe is proof. This is perfect to keep in the fridge for snacks or for weekday lunches.
Lemon Caper Chicken Salad
Ingredients:
1 large rotisserie chicken, deboned
½ cup mayonnaise
½ cup sour cream
Juice of 1 lemon
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon Dijon mustard
1 tablespoon juice from the jar of capers
3 green onions, chopped
2 stalks of celery, finely minced (I do mine in the food processor)
¼ cup capers
¼ cup fresh dill
Directions:
Take your deboned chicken and cut into chunks before transferring to your stand mixer. Beat the chicken in the mixer until it is finely chopped. Set aside. In a large mixing bowl, combine the remaining ingredients. Fold in the chicken mixing well. Refrigerate until serving.
