Jay's Sausage Chili



Jay's Sausage Chili


Ingredients:

 

2 pounds ground sausage, cooked and drained

1 pound link sausage cut into bite size pieces

1 red onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

3 stalks celery, chopped

6 cloves of garlic, minced

1 28-ounce can diced tomatoes

1 regular can of fire roasted tomatoes

1 small can of tomato paste

1 regular size can of tomato sauce

1 12-ounce can of beer

1/4 cup chili powder

1 tablespoon cumin

1 tablespoon oregano

1/2 teaspoon cayenne pepper

2 15-ounce cans kidney beans, drained and rinsed

1 15-ounce can pinto beans, drained and rinsed

2 cups shredded Monterey jack cheese

 

Directions:

 

Add a couple of tablespoons of bacon fat or vegetable oil to your Dutch oven and bring to medium heat.  Add onions, bell peppers, and celery sautéing about 10 minutes and veggies begin to become tender.  Add garlic and cook a couple more minutes.  Add In all the tomato products, beer, and seasonings.  Bring to a simmer and cook about 15 minutes.  Add In the beans and the sausage.  Bring back to a simmer and cook about an hour on medium heat.  Stir often.  Adjust for salt.   Lastly, stir in the grated cheese and stir until melted.  Serve plain or any toppings you choose like additional cheese, green onions, and sour cream.
