Jay's Loaded Mashed Potatoes


Ingredients:


5 pounds potatoes peeled and cut into chunks for boiling

1 stick of butter

1 8-ounce cream cheese, softened

1 cup sour cream

1 pound Velveeta cheese, cubed

1/2 and 1/2

1 Tablespoon garlic powder

Salt and pepper to taste

 

Directions:


In a large pot of salted water, boil the potatoes until fork tender.  Drain.  While the potatoes are still draining in the collider, add the butter, cream cheese, sour cream, and cheese to the warm pot.  Add the warm potatoes back on top of everything.  I let mine sit for a couple minutes before mixing so the cheese can begin to melt.  Using a hand mixer, combine everything mixing well.  Add in the 1/2 and 1/2 as needed to thin the potatoes to your preference.  Mix In the garlic powder and salt and pepper to taste.  The potatoes can be served immediately out of the pot for casual dining or transferred to a baking dish to be warmed and served later.  Top with a little shredded cheddar cheese If you like before baking at 350 degrees to warm.
