Our very favorite cole slaw is at Cock of the Walk, a local catfish house. It’s very juicy and sweet and so good. My mother made hers with only mayonnaise, salt and pepper. Stogner’s Fish Camp back at home makes theirs sweet. There are a thousand ways to make it. I’ve varied my recipe dozens of ways, but I think this version is my favorite. I recently made it for Friday Night Porch Party when I fried catfish. My friend, Carroll, said it was perfect a combination of a little juicy and a little sweet. Don’t let all the onions freak you out. You won’t even know they are in there.
Jay's Favorite Cole Slaw
Ingredients:
1 medium head of cabbage, shredded as thin as you can
1/2 red onion, sliced very thin 1/2 sweet onion, sliced very thin 1/2 white onion, sliced very thin 1 cup of your favorite mayonnaise
1 tablespoon olive oil 3 tablespoons water 1 tablespoon Lawry's seasoned salt
1 tablespoon celery seed 1/2 cup of sugar Salt and pepper to taste
Directions: A day before you plan to serve your slaw, combine the shredded cabbage and onions in a large bowl. In a separate bowl, combine the remaining ingredients to make your dressing. Pour the dressing over the cabbage mixture and mix well. Adjust the salt, pepper and sugar to your to liking. I like to transfer the slaw to a large zip lock bag to marinate 24 hours before serving. Everyone likes their slaw differently. Anne Scott likes hers a little sweeter. My friend Carroll likes it just like this.
