Jay’s Banana Pudding


FNPP Banana Pudding


Ingredients:

 

2 cups of sugar

2 sticks of butter, softened

2 cups graham cracker crumbs

Dash of cinnamon

1 family size vanilla pudding

3 cups of milk

1 cream cheese, softened

1 can of sweetened condensed milk

8 bananas, sliced

2 cups whipping cream

1/2 cup powdered sugar

2 teaspoons good vanilla, divided

 

Directions:

 

Preheat oven to 350 degrees.  Begin by combining the sugar and butter in a mixing bowl.  Fold In the graham cracker crumbs and the dash of cinnamon.  Mix well.  Transfer 2 cups of this mixture to an 8 1/2 X 11 baking dish.  Spread the mixture evenly pressing together to create the crust.  Transfer the remaining mixture to a parchment lined baking sheet.  Press the mixture out until It's about 1/4 Inch thick.  This will be your crumbs on top.  Place both pans in the oven and bake 15 minutes.  Remove both and set aside.  In a mixing bowl, combine the banana pudding with the milk and 1 teaspoon of vanilla.  Beat for 2 minutes with your hand mixer.  In a second bow, combine the cream cheese and sweetened condensed mix.  Now combine both mixes into one.  Once the crust has cooled, add 2 cups of the pudding mixture on top.  Next, add the banana slices and spread them evenly.  Pour the remaining pudding mixture over the bananas.  Now to make the topping.  Combine the whipping cream, powdered sugar, and 1 teaspoon vanilla in a mixing bowl and beat until your whipped cream is formed.  Spread this mixture over the pudding.  Once cooled, break the remaining graham cracker mixture into crumbles.  Sprinkle these all over the top.  Refrigerate a few hours before serving.  When serving, but sure to press hard so you get the crust.  It will be hard and crunch.
