My favorite thing about our new Friday Night Porch Party Instagram account is the new foodie friends I am making. Recently, one of those new friends, Chris Granger from Hazlehurst, Mississippi, shared this recipe idea with me. I added a little more mayonnaise than she does, but I think you are going to like this slaw. It’s very light and flavorful. Chris had me serve it alongside grilled chicken thighs with corn tortillas, and it was a winner. I think it would go very well with any grilled meat, especially during our hot Mississippi summers.
Jalapeno Lime Slaw
Ingredients:
1 head of cabbage, shredded as fine as you can get it
2 green onions, chopped
4 fresh jalapenos, de-seeded and cut into thin rings
1/2 cup mayonnaise
The juice of 4 limes
Salt and pepper to taste
Directions:
Make your dressing by combining the mayonnaise and lime juice. Salt and pepper to taste. Combine the dressing with the remaining ingredients and put into a zip lock until time to serve. I like to make mine a day ahead if possible.
