 Hot and Creamy Squash Dip


Ingredients:


2 pounds yellow squash, ruffly chopped

1 medium onion, peels and ruffly chopped

4 whole cloves of garlic

2 tablespoons butter, softened

1 8-ounce cream cheese, softened

1 1/2 cup mild cheddar cheese

1/2 cup parmesan cheese, grated

1/2 cup sour cream

1 teaspoon salt

1 teaspoon sugar

1/2 teaspoon lemon pepper

1 egg, beaten

 

Directions:


Preheat oven to 350 degrees.  To a large boiler, add the squash, onions, and garlic.  Cover the vegetables with water, add some salt, and bring to a boil.  Cook about 15-20 minutes and vegetables are tender.  Drain the vegetables and transfer to the food processor.  Process until the vegetables are smooth.  Transfer to a large mixing bowl and add all the remaining Ingredients mixing well.  Transfer the mixture to a baking dish and bake for about 20 minutes and the top begins to brown.  Serve warm with any cracker of chip.
