Several weeks ago, Ellen whipped up a batch of these for our Friday Night Porch Party dessert. They took me right back to 1980 when my mom and I made these together. There’s something special about that chocolate and peanut butter combination. I know you’ve had them before, but I did not want you to forget them this Christmas season. Such a simple and impressive cookie to make with your little ones.
Hershey Kiss Cookies
Ingredients:
48 Hershey Kisses, foil removed
1/2 cup shortening
3/4 cup creamy peanut butter
2/3 cup sugar (reserve 1/3 cup for rolling later)
1/3 cup brown sugar
1 egg
1 teaspoon vanilla extract
2 tablespoons milk
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Directions:
Preheat oven to 350 degrees. In a separate bowl, combine flour, baking soda and salt. Set dry mixture aside. In your standing mixer, beat shortening and peanut butter until blended. Add 1/3 cup granulated sugar and 1/3 cup brown sugar beating until fluffy. Add egg, milk and vanilla beating well. Gradually add in your reserved dry ingredients mixing well.
Shape the dough into 1 inch balls. Roll balls in the reserved 1/3 cup of sugar then place balls on an ungreased baking sheet. Bake 8-10 minutes and lightly browned. Remove cookies from oven and quickly press a Hersey Kiss into the center of each ball. Remove the cookies from the pan to a wire rack to cool.
