Henry's Smoke Brisket
Ingredients:
1 brisket, washed and fat trimmed to about 1/4 Inch
Olive oil
Garlic Butter Seasoning
Your favorite steak house seasoning (salt, pepper, granulated garlic and granulated onion)
Directions:
After drying the brisket, coat It well with olive oil. Next, generously coat the entire brisket with both seasonings. Wrap the brisket in plastic wrap and refrigerate overnight. When ready to cook, set the smoker at 250 degrees. Place the unwrapped brisket on the smoke for 7 hours. I add wood chips about every hour. After 7 hours, remove the brisket and double wrap in tinfoil. Place the brisket in a large disposable pan with a lid. Place In a 250-degree oven for 5 more hours. Remove the brisket from the oven and unwrap. Save all the drippings. Slice the brisket across the grain and place in a smaller baking pan. Pour the reserved dripping over the sliced brisket to keep It nice and moist.
