Ham Salad


The Life of a Morgan ham recipe series continues. Our friend and neighbor in Belzoni, An Faulkner, made this ham salad quite often. I haven’t made it in a while until this week. Ellen and Anne Scott were both in the kitchen as I was whipping it up. I could tell from their looks and little comments that they were not impressed until I asked them to try it. “OMG!” Anne Scott said. “That is so good!” She went back to the snack cabinet to grab some crackers so she could eat some more. Think chicken salad but made with ham. It’s perfect for a sandwich, but also great as a Friday Night Porch Party appetizer served with crackers.







Ham Salad


Ingredients:

8 ounces ham, chopped in the food processor

1/2 cup mayonnaise

1 tablespoon of your favorite mustard

1 heaping tablespoon onion, finely chopped

1 heaping tablespoon sweet pickles, finely chopped

Salt and pepper to taste

Directions:

Combine all ingredients in a mixing bowl. Refrigerate.



Ham Salad on an Hawaiian roll make the perfect little lunch.
