The life of a Morgan ham series continues. We love preparing food at home to take on beach trips. One of our favorites is Sausage Breakfast Pizzas, which are also on the website. For one recent beach trip, I noticed we still had some Sunday ham left. My creativity got the best of me, and the result was these little gems. Lou likes them better than the sausage ones. I like them both. I think your family will as well.
Ham and Swiss Breakfast Pizzas
Ingredients:
16 ounces ham, chopped in the food processor
16 ounces Swiss cheese, chopped in the food processor
2 tablespoons of your favorite mustard
Package of 6 English muffins, split
Directions:
Preheat oven to 350 degrees. In a mixing bowl, combine the ham, Swiss cheese, and mustard. Divide the mixture equally atop the 12 English muffin halves. Bake on a cookie sheet until nice and brown on top, about 15-20 minutes. If you are preparing these to serve later or to take on a trip, bake for about 5 minutes before transferring to the refrigerator. This will melt the cheese a bit so the topping will set.
