In 1992, I moved to Yazoo City, Mississippi to work at The Mississippi Chemical Corporation. I lived on Grand Avenue next door to the Harpoles. They were a precious little family, and Haley was their 5-year-old daughter. Haley visited at least once most days bebopping in with her blonde curls bouncing. She was so full of joy. We both moved away and lost touch. Fast forward 20 years and we end up living in the same neighborhood! Haley is now married to John, and they have two adorable daughters who are both very close to the age their mom was when I met her. We text almost daily about all things related to food. She loves to cook as much as me. This is her hummus recipe that your porch peeps will love!
Haley's Hummus Dip
Ingredients:
32 ounce package of premade plain hummus
2, 8-ounce packages of cream cheese, softened
3 tablespoons pepperoncini juice from the jar
3 tablespoons Kalamata olive juice from the jar
Salt and pepper
Toppings:
Pepperoncini peppers, chopped
Kalamata olives, chopped
Tomatoes, chopped
Green onions, chopped
Cucumbers, chopped
Feta
Roasted garlic
Fresh basil
Directions:
Combine all the ingredients to form this smooth and flavorful hummus. Spread on a dish of your choice and then layer the toppings. If preferred, the hummus is also delicious by itself.
Any combination of toppings may be used. The possibilities are endless!
