Gerard's Onion Soufflee


We met Gerard in 1996 when she started dating our late friend, Chad Mohamed. Chad moved back home to Belzoni after graduation from Ole Miss to work with his family’s farm. Chad was several years younger than us, but in the Delta, age doesn’t matter. We had friends from 25 to 65. We fell for Gerard as soon as we met her. If you have Mississippi connections, you know what I mean when I say she was a “little Chi O from Ole Miss”. She was just precious, and we became fast friends. For most gatherings in Belzoni, everyone would bring an appetizer. This Onion Soufflé was Gerard’s go-to for such events. She brought it to everything. I feel it’s only right that I name this dish in her honor on Friday Night Porch Party.


Gerard's Onion Soufflé


Ingredients:

3 medium sweet onions, chopped

3 8-ounce blocks of cream cheese, softened

1 cup mayonnaise

1 green jar of grated Parmesan cheese

2-3 dashes of hot sauce

Directions:

Preheat oven to 350 degrees. In a large mixing bowl, combine all ingredients well. Transfer mixture to a baking dish and bake 45-50 minutes. The top should be golden brown. Remove from oven and serve warm. We like to serve ours with Triskets, but Wheat Thins work well too.
