My mama made the best fried okra on the planet. She really did, but there was never enough for everyone to get their belly full. I’m not going to lie. We used to fight over it. This recipe idea popped up on my Instagram, and I had to give it a try at last week’s Friday Night Porch Party. It was loved by all. Don’t be afraid to pull out the oil and fry these up. I promise it’s really easy to make.
Fried Okra Patties
Ingredients:
1 pound okra, chopped into small pieces
1 medium onion, chopped
2 fresh jalapenos, seeded and chopped
6 fresh garlic cloves, minced
2 eggs, beaten
1 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1 cup water
1 tablespoon Cajun seasonings
1 teaspoon Cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
Directions:
Heat about 1/2 inch of oil to medium heat in the skillet for frying. In a large mixing bowl, combine the okra, onion, jalapenos and garlic. In a separate bowl, combine remaining ingredients and mix well. Fold the wet mixture into the okra mixture. When the oil is ready, drop about a tablespoon of the okra mixture into oil and flatten out a bit in the skillet to form little patties. Fry about 2-3 minutes before flipping and browning each side. Remove to a paper lined dish to drain. We serve ours warm with Mississippi Comeback or Garlic Ranch.
