FNPP Deconstructed Corn Dip
Ingredients:
1 can MexiCorn, drained (or use fresh corn with some red and red bell peppers added)
1 jalapeno, seeded and diced
4 green onions, chopped
1 8-ounce package cream cheese, softened
1/2 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 cup shredded cheddar cheese (optional)
Salt and pepper
Directions:
Begin by combining the corn, jalapeno, and green onions in a mixing bowl. Add salt and pepper to taste. Set aside. In another mixing bowl combine the cream cheese, mayonnaise, sour cream, onion powder, garlic powder, and salt. Spread this mixture onto your serving platter about 1/2 Inch thick. Top the cream cheese mixture with the vegetable mixture. If you are using cheese, sprinkler that on last. Serve with any scoop. Refrigerate until use.
