My first date with Lou was actually a blind date. Her brother, Andy, fixed us up, and we went on a double date with he and my friend Christy Pittman. We went over to Clancey’s Barbeque in Yazoo City, Mississippi. If I’m totally honest, I knew I wanted to marry her that night. She checked almost every box except she was not a Chi Omega from Ole Miss. However, she’s a beautiful Mississippi State Phi Mu. We ordered the Mexican Okra from Clancey’s on that very first date. Since then, we’ve learned to make it at home. I think mine are as good as Clancey’s. Your Friday friends will go nuts over these!
First Date Mexican Okra
Ingredients:
1 cup yellow cornmeal mix
1 jar of jalapeno slices, drained
Salt
Directions:
Batter the jalapenos in the cornmeal. Deep fry in 350 degree oil until brown and crispy. Remove to paper towels to drain. Lightly salt. Serve alongside Homemade Garlic Ranch dressing.
