It was a hot May afternoon at the beach when Erna introduced us to her homemade salsa. It was so good and refreshing. When I asked for the recipe, Erna said it was really easy and consists of two red ingredients (tomato sauce and whole tomatoes), two green ingredients (jalapeno and cilantro), and two white ingredients (onions and garlic). If you prefer salsa a little sweet, add about a tablespoon of sugar. Since that day at the beach, I’ve made this salsa dozens of times. I think you will like it, too. Serve alongside my homemade tortilla chips or my favorite store-bought tortilla chip, Tostitos Cantina Thin and Crispy.
Erna's 2-2-2 Salsa
Ingredients:
1 regular size can of whole tomatoes or 3 fresh tomatoes
1 regular size can of tomato sauce
1 jalapeno, de-seeded
1 bunch cilantro
1/2 sweet onion
2 teaspoons minced garlic
Salt and pepper
Directions:
In the base of your food processor, combine the whole tomatoes, jalapeno, cilantro and garlic. Pulsate until chopped. In a mixing bowl, combine the chopped vegetable mixture with the juice from the whole tomato can and the tomato sauce. Add salt and pepper to taste. I think this is best served at room temperature, but refrigerate any leftovers.
