Chicken Fajita Soup
Ingredients:
1 rotisserie chicken, deboned and chopped
2 yellow onions, cut into 1 Inch strips like for fajitas
2 bell peppers, cut into 1 Inch strips like for fajitas
5 cloves of garlic, chopped
2 15-ounce cans of black beans, drained and rinsed
2 28-ounce cans of stewed tomatoes
1 package of Spanish rice
Juice of one lime
1 teaspoon cumin
2 teaspoons chili powder
8 cups chicken broth
1/2 cup of sliced jalapeno peppers (optional)
Directions:
In a large Dutch oven or soup pot, Sautee the onions, bell peppers and garlic in a little vegetable until tender. Add In all the remaining Ingredients except for the chicken. Bring up to a simmer and cook about 30 minutes. Add In the chopped chicken. Simmer for about 10-15 more minutes. Adjust for salt and pepper. Add more broth If you like your soup a little fore soupy.
