Broccoli Bites


Recently, we had 1980s night at our Friday Night Porch Party. I recreated all sorts of old eighties appetizers. Lou’s favorite was my Broccoli Bites that I created as a throwback to the old broccoli cheese dip that was so popular years ago. These little golden nuggets are really delicious.

 











Broccoli Bites


Ingredients:

4 cups cheddar cheese, shredded

2 cups chopped broccoli (fresh or frozen)

1 box Panko bread crumbs

Directions:

At least an hour before serving, cook the chopped broccoli in salted water until tender. Drain and set aside. Melt the cheddar cheese in the microwave. Mix the broccoli with the melted cheese. Form one inch balls using the broccoli cheese mixture. Roll each ball in the bread crumbs pressing the crumbs around the balls so they crumbs will stick. Place the balls on a platter in the freezer until time to fry. Heat the frying oil to 350 degrees. Fry the balls about one minute on each side insuring they warm through. Remove to a paper lined platter before serving. I serve mine alongside creamy ranch dressing for dipping.
