We have been making these little gems our entire marriage. You will love them! I like to make them the day before company arrives for an easy Sunday morning breakfast. I usually save them for Sunday morning because we typically have a big breakfast on Saturdays. Plus, it’s a quick and easy breakfast for your guests to have before they depart. I also like to make them when we are on vacation as well as for the Grove when there are early games. I skip the baking step and put the cookie sheet in the refrigerator until they set, and then I transfer them to a large zip lock bag. If we are taking them to the Grove, I typically cut the pizzas into 4 slices to make them bite sized.
Breakfast Pizzas
Ingredients:
1 pound of ground sausage, browned and drained
1 pound of Velveeta cheese cut into cubes
1 package of English muffins, each split open
Directions:
Preheat oven to 350 degrees. Combine the cooked sausage with the cheese. Microwave for a couple of minutes until the cheese and sausage are combined, but not too runny. Spread a large spoonful of the mixture onto each English muffin half and place the halves on a large cookie sheet. Bake for 15-20 minutes until the pizzas are a little brown on top. Allow to cool a bit before serving. These freeze very well.
