I don’t give our friend Brandie enough credit. She’s a wonderful cook. Sadly, she simply doesn’t do much of it anymore! Back in the Belzoni days, this beer cheese dip was one of her go-tos. It’s creamy and flavorful. It is great with a chip or a cracker, but I love it best with bread, especially toasted Hawaiian bread.
Brandie's Beer Cheese Dip
Ingredients:
1 pound Velveeta
1 8-ounce block cream cheese, softened
1 teaspoon garlic powder
1 cup of beer
Directions:
Microwave the Velveeta and the cream cheese until softened. Using a whisk, mix the cheeses. You may need to microwave a few more minutes to get them to mix easily. Whisk in the beer and the garlic powder. I serve mine at room temperature in a bread bowl with broken pieces of bread for dipping.
