I have always loved the flavor of banana peppers. I like them on pizza, salads and pretty much anything else. Until today, I have always thought a banana pepper and a pepperoncini pepper were the same, but they are not. A banana pepper is sweeter whereas a pepperoncini pepper is on the bitter side. I love adding a few peppers to my Caesar salad for an extra punch of flavor, so I thought why not try adding some to my slaw. Y’all, I love it! We’re going to add some to our barbeque tacos for tonight’s dinner.
Banana Pepper Slaw
Ingredients:
1 medium head of cabbage sliced as thin as possible
1 medium sweet onion sliced as thin as possible
1 16-ounce jar of banana pepper rings, coarsely chopped
1 cup mayonnaise
1/4 cup of the marinade from the pepper jar
1/4 cup sugar
1 tablespoon black pepper
1 tablespoon salt
Directions:
Combine the cabbage, onions and banana peppers in a large mixing bowl. In a separate, smaller bowl, combine the remaining ingredients creating the dressing for the slaw. Pour the dressing over the cabbage and mix well. Taste to check and see if additional salt is needed. I like to transfer my slaw to a large zip lock bag to marinate a few hours before serving.
