Years ago, we were invited over to some friend’s house at the last minute, and I needed an appetizer to take. I basically combined what we had at the house and created this. I usually make it when avocados are in season. It is light and refreshing for summer Friday Night Porch Parties.
Avocado Salsa
Ingredients:
3 avocados, diced
3 tomatoes, chopped
5 green onions, chopped
1 bell pepper, chopped
1 jalapeno, seeded and chopped
1 bundle cilantro, chopped
1/2 cup apple cider vinegar
2 tablespoons oil
1 lime, juiced
Salt and pepper to taste
Directions:
Combine all ingredients in a bowl and refrigerate until ready to serve. Add a second lime if you want it a little more tart. I serve this with multi-grain Scoops.
