Grapefruit and Avocado Salsa
Ingredients:
2 cups grapefruit segments cut into small chunks
3 avocados, cut into small chunks
1/2 red onion, diced
1 jalapeno, seeded and chopped
1/4 cup vegetable oil
1/4 cup white vinegar
1/4 cup sugar
1/2 teaspoon dry mustard
Juice of 1/2 a lime
Salt and Pepper
Directions:
In a small separate bowl, whisk together the oil, vinegar, sugar, dry mustard, and lime juice. Adjust for salt and pepper. Whisk for several minutes and the dressing Is a little creamy. Fold In the fruits and vegetables. Check for salt and pepper again. Refrigerate until serving. Serve with scoops.
