You’ll hear the name Amy Dear often if you continue to read my posts so I figured I might as well properly introduce her. You know those friends that just “get” you? Amy “gets” me. We are very much alike. Luckily, our spouses’ personalities are very similar, so the couple friendship works very well. Our history with this family goes way back. Neighbors for many years, church, Grove Group, I cooked for both of their daughter’s weddings, we vacation together. We both have large families. Lots of history! We just love them. Amy has been making this recipe for years. It’s so easy and so good. Great for sandwiches or nachos. After removing from the oven, let it cool down for a while. While it’s still a little warm, break the meat apart with your hands and remove all the fat before shredding or chopping the meat. It’s much easier to remove that fat before it gets cold. This recipe is definitely a keeper.
Amy Dear's Overnight Boston Butt
Ingredients:
Boston butt
1 1/2 tablespoons Onion salt
1 1/2 tablespoons Garlic salt
1 1/2 tablespoons Seasoned salt
1 1/2 tablespoons Lemon pepper
1 bottle Liquid Smoke
Directions:
Place the Boston butt fat side up in a glass baking dish. Pour the liquid smoke over the butt before liberally coating with the spices. Cook uncovered at 275 degrees for 8 hours.
